Spinach Tomato Pulao

Spinach Tomato Pulao is one pot meal with a healthy combinations of spinach in tomato mix of spices. Simply spicy and tasty and nutritious. Spinach or Palak provides healthy nutrients and is rich in iron, vitamins and minerals. It is very important for overall health including skin, hair etc. It is one of the immunity booster foods.

Ingredients
  • 1 cup rice (cooked)
  • 1 cup chopped spinach
  • 1/4 cup steamed peas
  • 1/4 cup onions finely chopped
  • 1 cup tomatoes finely chopped
  • 1/2 tsp ginger garlic paste
  • 2 tsp Pulao masala
  • 1 tsp chilli powder
  • 1 tbsp butter
  • 1 tsp jeera
  • salt to taste
  • Few coriander leaves

Method-  Cook rice and spread it on a plate to cool. In a kadai, heat butter, add the jeera, when the jeera is done, add ginger garlic paste, chilies and sauté for 1-2 mins. Next add the chopped onions and sauté. Add the tomatoes and cook till it becomes mushy, next add the masala pwds, and fry for 1-2 mins. Add the spinach and simmer for 5 mins on low heat, add cooked rice, peas, salt and mix well. Serve hot with  raita of your choice.

Ingredients

  • 1 cup rice (cooked)
  • 1/4 cup steamed peas
  • 1/4 cup onions finely chopped
  • 1/4 cup capsicum finely chopped
  • 1 cup tomatoes finely chopped
  • 1/2 tsp ginger garlic paste
  • 1-2 green chilies
  • 2 tsp pav bhaji masala
  • 1 tsp chilli powder
  • 1 tbsp butter
  • 1 tsp jeera
  • salt to taste
  • Few coriander leaves


Method- Cook rice and spread it on a plate to cool.In a kadai,heat butter ,add the jeera , when the jeera is done , add ginger garlic paste , chilies and sauté for 1-2 mins.Next add the chopped onions and sauté  , add the capiscum and mix and fry again.Add the tomatoes and cook till the veggies become mushy, next add the masala pwds , and fry for 1-2 mins.Add the cooked rice, peas , salt and mix well. Serve hot with raita of your choice.

Kande Pohe (onion avalakki)

Kande Pohe (onion avalakki) is very simple and easy to prepare.It has the nice tangy and spicy flavor , a favorite Mumbai Breakfast.Poha (oggarane avalakki ) or seasoned rice flakes are healthy and easy to digest too, just right for all ages.

Ingredients
1 cup poha (flaked rice /avalakki) 
Onion-2 finely chopped
1 tbsp. oil
1/2 tsp. mustard seeds
1/2 tsp jeera
1/2 tsp. Chana dal
1/2 tsp. Urad Dal
1/2 tbsp Peanut
5-6 green chilies, finely chopped 
Few chopped coriander leaves
Few curry leaves
Hing-pinch
Tumeric-pinch
Salt to taste
1 tbsp. grated fresh coconut (opt)
1 tsp Lemon Juice


Method
Soak the poha in water for 5 minutes. Wash thoroughly and drain the water completely.Heat oil in a pan, fry peanuts and keep it aside then add mustard seeds, after it splutters, add chana dal/urad dal ,jeera, hing, turmeric and stir fry.Add green chillies, curry leaves.Add chopped onions , fry it for a while. Add soaked avalakki, salt and mix well.Add coconut ,coriander leaves , lemon juice , mix carefully.Serve hot.

Maida Crisps is a one off bonda variety if normal seems boring.This is crispy from outside and soft from inner side.Enjoy this on a nice lazy afternoon with something interesting to read.

Ingredients

  • Maida - 1 cup (flour)
  • Semolina/Chiroti Rave - 3 tbsps (sooji)
  • Curd - 4 tbsps (yogurt)
  • Oil - 1 tbsp
  • Salt - 1/2 tsp
  • Sugar - pinch
  • Jeera-1/2 tsp
  • Green chillies-2-3 finely chopped
  • Fresh coriander leaves-chopped
  • Baking powder - 1 tsp
  • Water to knead into a dough
  • Oil - for deep frying



Method-Combine all the mentioned ingredients (except oil for deep frying) and make a soft dough. Place it aside for 2-3 hours.Heat enough oil in a kadai.Make small balls (make any shape ) and add to the kadai carefully.Flip over till it is golden brown on both sides.Place it on absorbent paper.Enjoy hot with ketchup or chutney of your choice.

Vegetable Saagu Version II

Vegetable Saagu is an all-time favorite traditional side dish for Chapatis or Puris in South India. Healthy and nutritious coconut blend vegetable mix. You can enjoy this mix veg sagu with Idlis and Dosas too!


Ingredients
Vegetable Saagu, mix veg sagu, saagu
Vegetable Saagu

Mixed vegetables combo

Carrot, Beans-chopped
Stirfry with little salt.
Potatoes (boiled & chopped)
tomatoes Chopped
Cabbage, onion-Shredded
Peas : 1 cup steamed


For Grinding

1.Hurigadale/Dhalia dal - 2 tbsp
2.Chakke/Cinnamon stick -1"piece
3.Star Anise-1 petal
4.Lavanga/Cloves - 2
5.Khus Khus
6.Red chillies 4-5
7.Coriander leaves - 1tbsp (chopped)
8.Salt
9.Fresh grated coconut-2-3 tbsp


For Seasoning

Mustard, Chana Dal, Urad Dal, Curry leaves, Hing and turmeric powder 

Method 

Roast the ingredients from 2-5 with little oil.
Next grind all ingredients along with spices.
In a pan heat a tsp of oil and add mustard, chana dal, urad dal once done, add curry leaves, hing and turmeric.
Next add the vegetables. Mix. Add the grounded paste and mix well. Bring it to boil. Add salt. 
Simmer on low heat for 3-4mins.
Cover and let the saagu blend well.
Serve Vegetable Saagu hot with hot puris or chapatis.

Spinach Aloo Palya / Palak Aloo Sabzi

Spinach Aloo Palya / Palak Aloo Sabzi is made from simple potatoes blended in Bhath powder- with palak, a South Indian variety. Tasty, spicy and delicious. A healthy green delight for Indian Breads.

Ingredients

  • 1 cup spinach (cleaned and chopped)
  • 2 potatoes (boiled)
  • 1/2 tsp Mustard
  • 1/2 tsp chana dal
  • 1/2 tsp urad dal
  • 1/2 tsp jeera
  • Hing-pinch
  • Turmeric-pinch
  • 2-3 tsp Bhath pwd
  • Few Curry leaves
  • 2 tbsp Oil
  • Salt to taste

Method: Mash the boiled potatoes.Heat Oil in pan,add mustard, chanadal, uraddal, jeera, hing, tumeric, curry leaves, and fry for some time. Add the chopped spinach and fry well next add the boiled potatoes and mix. Add the bhath pwd, salt and mix well, fry for some time till the sabzi blends well. Add coconut if req. Serve hot with chapati or rasam rice.

Poha Chivda Ver III

Poha Chivda -is simple and easy snack recipe. Enjoy with hot cup of tea.You can prepare it as  part of Diwali Farhal platter. This is the red chilly version. Spicy and tasty.

Ingredients
  • 1 cup Poha
  • Few Peanuts (kadlekayi)
  • Few White Dal(Hurikadle)
  • 3-4 tbsp oil
  • Salt to taste
  • Red chili pwd -1/2 tsp
  • Roasted Dry coconut pieces-2 tsp
  • Salt for taste
  • Sugar -1/4 tsp (opt)
Seasoning
  • 1/2 tsp mustard
  • 1/2 tsp Jeera
  • Few curry leaves
  •  Red chilies-4-5
  • Hing -pinch
  • Turmeric-pinch
Oil-Frying Poha

Method: In a deep pan, heat the oil fry peanuts ,white dal and remove on a plate. Fry poha in oil to make crispy, remove from the pan.In a kadai, prepare the seasoning. Heat oil ,add mustard seeds and when it starts to pop up, add hing, turmeric, red chillies, red chili pwd, curry leaves. Once done, add to the poha  and mix well,add salt and sugar, again mix well and then add the dry coconut, peanut and mix well. Store it in a air tight container.

Rava Bread Toast

Rava Bread Toast is a interesting recipe made from leftover upma , topped on bread . A yummy and crunchy healthy snack is ready for your kids.

Ingredients
  • 4 bread slices
  • 4 tbsp Tomato Upma (Leftover)
  • 1 tbsp chilli powder

  • 1/2 tsp garam masala
  • 1/2 tsp red chilli sauce
  • Butter 

Method : In a bowl, add the upma,add the masala  pwds,salt ,sauce and mix well.
Take the bread slices, apply the tomato upma on the bread slices,using a knife and spread all over.
Next heat a tava, add butter or oil,roast the bread with the upma side.
Once it is slightly brown ,fry the other side.
Serve Rava Bread Toast hot with chutney or ketchup.




 (you can use any upma that is left over, reduce the spice for kids)

Chavli Curry

Chavli Curry (Chavli-Black eyed Peas, Alasande Kaalu -Kannada)  is a healthy nutritious side dish for chapati or rice. 

Black eyed peas  is a legume variety used in Indian Homes. This curry is tomato onion based.

Ingredients

  • Chawli/Black eyed peas – 1 cup
  • (cooked )
  • Tomatoes-1 cup (chopped)
  • Onion-1 cup (chopped)
  • Ginger garlic paste-1/2 tsp
  • Dhania Jeera pwd-1/2 tsp
  • Garam Masala-1 tsp
  • Red chili Pwd-1 tsp
  • Green chilies-1-2
  • Oil-1-2 tsp
  • Salt-for taste
  • Cumin seeds -1/2 tsp
  • Coriander leaves-few



Method-

In a pan, heat oil in a pan, add cumin seeds add onions and sauté well.
Next add ginger garlic paste, chillies and fry for 1-2 mins.
Next add chopped tomatoes, and fry till mushy.
Next add the masala pwds and fry. 
Add the cooked chawli and mix.
Add  about 1/2 cup water and stir well.
'Simmer on low heat for 10-15 mins till the gravy blends well.
Serve hot with rice or chapati.

Rice Rava Upma / Akki tari Uppittu

Rice Rava Upma (traditionally known as Akkitari uppittu in Karnataka) is simple and easy to prepare.A perfect, filling,healthy breakfast recipe. With Avarekayi ,its yummy.Definate worth a try for breakfast during winter months.

Ingredients:

  • Rice rava- 1cup (akki tari)
  • Water - 2 cups
  • Green chillies-6-7 finely chopped
  • Curry leaves-few
  • Avarekayi -1cup (steamed)
  • Oil-2 tbsp
  • Mustard -1/2 tsp
  • Hing- pinch
  • Jeera-1/2 tsp
  • Channa dal-1tsp
  • Urad dal-1tsp
  • Salt to taste
  • Roasted cashews-few
  • Freshly grated coconut-1/2 cup
  • Coriander leaves-few

Method: Fry the rava for 10mins and keep it aside.Heat oil in a pan add mustard,jeera when they begin to splutter ,add channa dal and urad dal fry until light brown.Next add ,hing,curry leaves, green chillies and fry.Add fried rava ,salt and mix well next add steamed avarekayi,2 cups of  boiling water. Mix well.Cook till the water is gone.Simmer and close the lid for 2-3 min.Garnish with coriander and coconut and serve hot with khara boondi.

You can also add Dhania-Jeera Powder/Kalamiri Powder for additional spicy flavor.(In case ,the upma seems dry add some more water.)

Coconut Dosa

Coconut Dosa is simple and easy dosa. Blended with fresh coconut and rice, its delicious. Enjoy hot with chutney powder.


Ingredients:

  • Coconut – 1 cup grated
  • Rice-2 cups (soaked well)
  • Poha-handful (soaked)
  • Oil – for making dosa
  • Salt as per taste
Method: Grind soaked rice and poha into smooth batter. Next add salt and coconut and mix well. Let it aside for 1-2 hrs. Spread dosa batter on the tawa, add oil for making dosa. Slowly flip over and let it cook on the other side.

Serve hot with chutney or chutney powder.

Stir fried shredded cabbage with peas blended with bhath powder in rice tastes delicious.

Ingredients:

  • 1 cup rice
  • 1 cup stir fried Green Cabbage(shredded)
  • (pata Gobi)
  • 1/2 cup peas (steamed)
  • 1/2 tsp. mustard
  • 1/2 tsp.chana dal
  • 1/2 tsp. urad dal
  • Hing-Pinch
  • Curry leaves-few
  • Turmeric pwd-pinch
  • 2 tbsp. oil
  • Salt to taste
  • 2 tbsp. Bhath Powder
  • Dry grated coconut-1 tbsp
  • Peanuts-few

Method: 

Cook rice and Spread it on a plate.
Heat oil fry peanuts and keep it aside,next add mustard seeds, after it splutters ,add chana dal,urad dal,hing,curry leaves, turmeric and fry until golden brown.
Add the cabbage and stir fry well.
Next add the steamed peas, bhath powder, salt and mix well.Add rice, and mix well.
Garnish with coconut.
Serve Cabbage Masala Bhath hot with raita or papad or enjoy just like that.

Potato Bhajia

Potato Bhajia is yummy and tasty crisps made from potatoes in besan ( seasoned lentil flour batter ) Enjoy sizzling hot with tea just anytime...

Ingredients
2 potatoes
(peeled and thinly sliced)

For Batter
1 cup Besan (chick pea flour)
1 tsp Rice flour
½ tsp red chili pwd
1 tsp bhath pwd
1 tsp ajwain
turmeric-pinch
Salt for taste
hot oil-/2 tsp

For Frying
Oil

Method: -Take a bowl combine all the ingredients and mix well. Add little water,and make the mix. Heat 1/2 tsp oil and add it to the batter.Add the sliced potatoes to the batterand mix well ,the flour and potatoes should blend and be well coated .
In a kadai heat sufficient oil for frying. Slowly add the sliced potato besan mix in the hot oil. Fry till golden brown on both sides. Drain on absorbent paper. Serve hot crisp bhajias with ketchup or chutney of your choice.

Rajma Masala

Rajma Masala (Rajma aka red kidney beans ) is a famous Indian spicy gravy enjoyed almost by everyone.Very tasty and delicious. Of course nutritious and healthy too.

Ingredients
1 cup Rajma (kidney beans)

(soaked and boiled)
1 cup chopped tomato
2-3 tsp oil
1/2 cup grated onions
Cumin /Jeera  - 1 tsp
1-2 green chillies
1 tbsp ginger garlic paste
1 tsp Garam Masala
1/2 tsp Dhania Jeera Pwd
1/2 tsp red chili pwd
Fresh Cream-1/2 tsp (opt)
Kasuri Methi-1tsp
salt to taste

Method-Heat the oil in a kadai, add the onions and sauté  for 2 to 3 mins.Next add ginger garlic paste,chilies and fry well.
Add the chopped tomatoes, cook till it becomes soft.
Add the masala pwds and mix. Next add the cooked rajma.
Add salt, cook on low heat till the sabzi blends well.
Once it starts to boil, add fresh cream, keep stirring,cook on simmer for 5-10 min.
Serve Rajma masala hot with Indian Breads or Jeera Rice.

Carrot Juice is healthy and energizing drink.Enjoy chilled with your kids.



Ingredients:

  • Carrot : 4
  • Ginger shreds-1-2 tsp
  • Sugar: 1 - 2 tbsp (as per taste)

 Method-Cut the carrots.In a blender, add the carrot pieces along with water and other items in ingredients and blend well. Strain and serve chilled.

Rava Kheer / Rave Payasa


Rava Kheer / Rave Payasa is very easy and delicious kheer that can be prepared in less time.Made from Semolina , its healthy and perfect across all ages.Enjoy it chilled or warm.


Ingredients

  •     Chiroti Rave 1/2 cup (Fine Semolina)
  •      Milk      2 cups
  •      Ghee     1 tsp
  •      Cardamom/Elachi powder -1/2 tsp
  •      Sugar      2-3 tblsp  
  •      Cashew nuts /Raisins-Few



Method-In a pan add ghee and roast the rava for 10-15mins.Next add milk and mix well.Let it cook for 5 mins.Next add sugar and mix well.Meanwhile in a small pan,fry cashews,raisins in little ghee.Add this to the rava mix.Add the elachi pwd and serve.

Add this to the dosa batter, add chopped coriander leaves and mix well.

Akki Kadle bele Payasa

Akki Kadlebele Payasa (Rice Chana Dal Kheer) is a very famous and traditional dessert  among the Madhwa families during festival times. Made from rice and chana dal (lentils) with milk, the pudding is very tasty and delicious.

  • Ingredients
  • 1 cup Rice
  • 1/2 cup Chana Dal( kadalebele)
  • 1 cup jaggery grated
  • 1/2 cup milk
  • Few raisins
  • Few cashew nuts
  • Few almonds
  • Elachi pwd-1 tsp
  • saffron
  • ghee-2 tbsp
  • Dry coconut shredded




Method- 



Roast the dryfruits in little ghee and keep it aside. 
Cook the rice and dal in cooker with req qty of water. 
Next melt jaggery on low heat, once the jaggery starts boiling, add the rice dal mix and keep stirring. 
Next add milk, cardamom powder, the cashews and raisins, shredded dry coconut. 
Mix well. Simmer on low heat for 5-10 mins.Add little ghee.
Mix well and serve warm. Enjoy Akki Kadle bele Payasa with your family.

Tomato Chutney

Tomato Chutney,tomato,chana dal
Tomato Chutney

Tomato chutney is quick and easy to prepare.One more variety of chutney for the dosas,idlis or chapatis.


Ingredients :
Tomatoes-2 chopped
Chana dal -2-3 tbsp
Red chillies - 6-8
Tamarind - little
Salt as required

Seasoning

Mustard seeds 1 tsp
Hing pinch
Curry leaves few
Oil-2 tsp



Method:
Roast the chana dal till beomes slightly red in colour ,then add red chillies in little oil.Grind chana dal, tomatoes, red chillies, tamarind and salt keep adding water little by little  to blend it well.Season with mustard seeds,hing,curry leaves.
