Corn Chitranna

Sweet Corn Chitranna is a easy seasoned rice variety with yummy corn added to it . Kids will definitely love it. Chitranna is a favorite South Indian Rice variety, you can make variety of chitranna aka one pot meal. This is a very simple one.


Ingredients:
Corn Rice
Corn Chitranna 
  • 1 cup rice (cooked)
  • 1/4 cup fresh coconut(grated)
  • salt to taste
  • Sweet corn boiled 1 cup
  • 1/2 cup onion finely chopped

Seasoning
  • 1/2 tsp mustard seeds
  • 1/2  tsp cumin seeds
  • 1 tsp channa dal
  • 1 tsp urad dal
  • few cashew nuts
  • 1 tbsp peanuts
  • Hing pinch
  • Green chilies-2-3
  • few Curry leaves
  • Few coriander leaves
  • Oil-2 tbsp


Method:  Allow the rice to cool, spread it on a plate. 
Next heat oil in kadai,roast cashews and peanuts and keep it aside, next add the other items in seasoning, roast well, add onion and fry, add the rice to this seasoning. Add the sweet corn, grated coconut, cashews and peanuts and mix well. Saute for 1-2 min. Garnish the rice with coriander leaves. Serve hot .

Thokku Dosa

Thokku Dosa is an interesting dosa recipe.Just add ready made or home made mango thokku and you have a tangy spicy dosa ready in no time ! Try it out .

Ingredients:


  • Dosa Flour 2 cups
  • Salt as per taste
  • Oil
  • Jeera-1 tsp
  • Onion-1  finely chopped
  • Mango thokku-3-4 tbsp

Method:

In a bowl , take the dosa flour ,add the above items and mix really well.
Make dosas. Serve hot with butter and chutney of your choice.

Sabudana Dosa

Sabudana Dosa is a dosa  that is thin and crispy, simple and easy made from soaked sabudana or tapioca blended with normal dosa batter. Enjoy it hot with chutney and butter.


Ingredients


  • Rice- 1 cup
  • Sabudana/Sago- 1/4 cup
  • Urad dal - 1/4 cup
  • Methi seeds- 1 tsp
  • Salt- To taste
  • Poha- 1/4 cup

Method-  Soak urad dal, sabudana methi seeds and rice overnight. 

Grind all together to a soft batter along with poha.


Keep it aside overnight. Add salt to batter.Heat tava and spread a thin dosa. 

  Make dosas. Serve hot with butter and chutney of your choice.

Corn Paneer Masala


  • Corn Paneer Masala is a easy gravy for your parathas or rotis.Enjoy it hot. Kids will love the combination sweet corn with paneer , healthy and nutritious.




    Ingredients

    To Grind 

Few broken cashew
1-2 Green Chilies
1/2 cup chopped Onion


Others
1/2 cup paneer shredded
1 cup  sweet corn (boiled)
1/2 cup capsicum (stir fried)
1-2  tbp  oil
1 piece bay leaf
1 tsp Chili pwd
2 tomatoes puréed
1/2 tbsp cream
1 tsp sugar
1/2 tsp garam masala pwd
1/2 tsp kasuri methi
1/2 tsp jeera /cumin seeds
Coriander leaves-garnish
Salt-for taste


Method

Grind all the items mentioned above under grind into fine paste. Add oil in a pan, add the cumin seeds, bay leaf. Add the chilly powder, garam masala ,ground paste and the tomato puree and let it cook ,keep stirring. Add the corn,capsicum shredded paneer and malai (cream). Add salt,sugar and mix well. Cook till the gravy thickens Serve hot with roti of your choice.

Rice Crisps / Akki Sandige

Rice Crisps / Akki Sandige  an interesting recipe made during summer season. Learn to make sandige / vadams /fryums right from the first level. Make it , fry it and enjoy it.

Rice Crisps
Ingredients 

  • 1 cup rice flour
  • 7 cups water
  • 1 Tsp Hing
  • 8-10 green chilies
  • 1 Tsp cumin seeds
  • 1 Tbsp salt (adjust to taste)
  • 1/2 Tsp oil
  • 2-3 Tbsp buttermilk

Method - Grind green chilies with cumin and keep aside. In a bowl mix rice flour with the remaining water with hands into a smooth liquid dough. Next in a pan  heat 1 cup of water with 1/2 Tsp oil, salt , next add chilies paste and hing. Now slowly add the rice flour mix into this water keep stirring. Let it cook on low heat, keep on stirring for 10 mins. Switch and let it cool.
Meanwhile in a sheet or plate, sprinkle buttermilk and slowly take the rice mixture and start putting it in form of sandige leaving gaps in between.

Keep it in hot sun or terrace daily till it is completely dry from  all sides. Keeping flipping, once dried store in containers. Use as required.

Frying- In a pan heat oil well, add the dried sandige, fry well and enjoy with bisi saaru anna or with tea or coffee.

Aloo Capsicum

Aloo Capsicum is a delicious combination for Indian breads. It can be made in variety of ways. This is one with hurikadle pudi / Fried gram dal powder and mildly spiced. Perfect for kids.

Ingredients 

  •  2 potatoes (boiled and diced)
  •  2 capsicums 
  • 1/2 tsp cumin seeds 
  • 1/2 tsp mustard
  • Hing pinch
  • 1-2 green chillies
  • 1 tsp turmeric powder 
  • 1 tsp Hurikadle powder
  • 2 tsp grated coconut
  • 1-2 tbsp Oil
  • Salt 

  • Method-Heat oil in a pan. Add cumin and mustard, hing, turmeric, green chilies and fry till done  add capsicum and sauté for some time. Next add potatoes ,the hurikadle powder , salt and mix well. Garnish  with coriander leaves and coconut and serve Aloo Capsicum hot with chapati or rice.
